For my daughter's first birthday I want to use this recipe I have for lemon pudding poke cake and strawberry pudding poke cake for the THREE tired cake I am going to make. Do you think this is a good recipe to use? The recipe comes with a frosting recipe that involves cool whip for a nice light frosting.....do you think these recipes will hold up for a three tiered cake? Her birthday is in June so I want to make something very light and different...not heavy and boring like chocolate...thanks!
