Can you help me make a fitness routine/diet?

So this isn't going to be your typical diet/routine. Instead of wanting to lose weight and get toned, I want to gain weight and add some meat on my bones! Here's some stats on me:
Female
5'9 and 110 lbs.
Extremely high metabolism
gets in approx. 2 hrs of activity a week (if that..)
Eat's mainly food like pasta, soups, and sandwiches. (any other ideas of food would be great! but I hate any beef products, actually I'm not much of a meat loving person..)

I plan on starting to bike a lot, as my cousin wants to bike across Iowa with ragbrai this summer. The only sport I partake in is snowboarding, which only extends through about 3 months of the year for me. I would like to build muscle, which I know biking won't really do, nor does my normal food choices help..
If you could make me an exercise plan (days of the week, etc.) that would be great! Keep in mind, I'm a high school junior, so i can't do stuff during those 8 hours of school! And I'm HATE running, it just hurts my knees:( any help would be MUCH appreciated!
