http://vegweb.com/recipes/spinach-quiche-fakin-bacon you can make that and use the quiche base for any flavor quiches, including mushrooms as well as just spinach and fake bacon (I never used the fake bacon)
but for spinach you can do pretty much anything with it. Raw on cold salads (or steamed), in warm salads with beans/rice etc in them, in pasta, as a pesto, with couscous or just by itself, instead of lettuce on burgers.
Mushrooms? I kind of aren't too creative with them and only use them as ingredients instead of by themselves or as the main ingredient, like using big ones instead of burgers etc.
