Butter will give you a crisp/crunchy cookie, shortening or margarine will give you a soft chewy one, vegetable or olive oil will give one like a pancake.
You can use vegetable oil, reduce the liquid in the recipe by about a teaspoon. Do not use olive oil, it will change the taste. You could possible use butter, but I can't remember the substitution amount.
