Why does a lot of prophecy have a dual fulfillment?

The prophecies gave meaning for those living in ancient times and also for those living in the last days.

2 Peter 1:19
We have also a more sure word of prophecy; whereunto ye do well that ye take heed, as unto a light that shineth in a dark place, until the day dawn, and the day star arise in your hearts:
 
Stories written AFTER events appear prophetic cos they were written that way.

This is our Father's way of revealing his glory by making his word and self revelation by stages in history. crossing the Red Sea foreshadows baptism, the Passover to Jesus sacrifice, manna and feeding the 5000 to the Holy Eucharist presence of Jesus now in our daily life; for Catholics at least. Like Psalm 21 describes the experience of Jesus on the cross 1000 years before it happened, this shows how involved God chooses to be in our human realities and history.
The dual prophecies idea shows God is managing the whole plan and process of salvation history and what goes into it. Which includes you.
 
One major reason is to provide evidence to skeptics that God is real. There is no other book written over such a long period of time, by so many different authors, that contains so many examples of dual and triple fulfillment of prophecies - some of them yet future. Only a book that has been inspired and watched over by one, single, supernatural being who has lived throughout its writing and knows the end from the beginning, could do that.
 
Because man is a dual-natured creation - both flesh and spirit. Therefore, all scripture has both a literal and figurative level of understanding.
