The ironic thing about "movie stars" acting in movies?

The job of an actor is to portray the human condition and understand it. But the odd thing is, actors/movie stars are so far removed from being human and "this world" so to speak, how could they possibly portray those things? Its really weird.

Like how could they ever know the things people go through, they can only really look onto human lives as spectators. A single mom making minimum wage would know how to portray the human condition, not movie stars.

That's very true but at times they try their best to understand the character very deeply by doing various research, some even have emotional breakdown while they shoot a tragic character.
At least they are trying to show to society that there are different type of people in society and there are some about whom we aren't aware of.
Take the case of the move "Monster", who can say the lead character is the same graceful and pretty Charlize Theron.
