How do I update my iPod to the IOS 5 software?

My iPod touch currently has the software version 4.2.1 and I want to update it to the 5 software.

However itunes hasn't found that theres a new update! And when I go on my iPod section of iTunes and click "check for update" it says that 4.2.1 software IS the latest update. Which is obviously incorrect. Could someone please help me so I can update it???

ALSO, how do I back up my apps onto iTunes? Because I know someone that updated to IOS 5 and it deleted all the apps that hadn't been synced to iTunes. When I press "transfer purchases" from my ipod it still doesn't add to itunes so I'll lose them all ><

Sync it with your trashcan, that'll solve all your problems. Seriously, apple's overpriced, very limiting, and has an app store of about 70% crap. (Example, the mirror app that costs a dollar, it turns your screen black, the equivalent of just turning it off!)
