Help me plan a vacation for my mom and I?

I'm 20 and my mom is in her 40's and I want to plan a vacation for just her and I for this summer. I want to do something thats about 3 or 4 nights. And the biggest problem is my budget. I want to spend less than $1000 total.

I was thinking taking her to bed and breakfast at the shore or Connecticut or NYC or a fancy hotel somewhere?
Im not really sure what to do that would be fun for under $1000 total,

Any idea of what attractions of places of interest there are? We live in North Jersey and I drive so we could easily get somewhere by car.

She really likes gardens and flowers so is there any type of big gardens to visit with a near by bed and breakfast? Im willing to drive up to 4 hours from NYC

Maybe it is enough to buy a cruise package. You may find one to go to Bahamas or any other island in the Caribbean for $300 p/p for a weekend and I am sure you can find a ticket to Florida for less than $200 p/p.
