can you make chile rellenos with bell peppers?

i have leftover chicken and steak fajita meat, mexican rice, and three bell peppers, i have a variety of dried chile's, and tons of seasonings.....i do not have any cheese.....is that ok and will it still be authentic?

A chile relleno is not a chile relleno without cheese. Cheese is the main staple of that dish.
