[for audiophile's] What should I be listening for?

I listen to music everyday. I usually just rip them from my CD so they are normal .mp3 files but I have read about FLAC. It is supposed to be of much better quality so I downloaded a few old songs and I listened to them and I did not notice that big of a difference. My headphones are not cheap and my hearing is fine... so audiophile's tell me what should I be listening for?
 
MP3 is the most used format for a reason: high quality, small file size. Even with good headphones you won't notice a difference, it's only in you have concert-size speakers that you'll notice poor quality. Audiophiles have no idea what they're on about.
