Cain Velazquez, Diego Sanchez and Roger Huerta for the UFC

Brazilian, Anderson Silva (although he has been disappointing lately) and Mauricio Rua. From WEC Jose Aldo is a beast.

Escudero is the only real Mexican fighter in the UFC that I can think of. I know Tito has Mexican heritage but he's more of an American.

As for Brazilian fighters. I'm big fans of Thiago Silva, Shogun Rua and JDS.
