What's a good slow cooking recipe to make?

I'm home alone tomorrow so I got the day and kitchen to myself. So I'm wondering what's a good slow cooking recipe to make? I like slow cooking because the flavour builds up and the meat breaks down.

I made a few things recently, so I kind of don't want to eat the same thing again.
They are all cooked in the oven.

Lamb Shanks with rosemary, oregano, thymes
Lamb Briskets with rosemary, oregano, thymes
Pork Shoulder with Root Beer
Baby Back Ribs with bbq sauce

Heads up, I do not eat beef.
