What should I cook with my chicken thighs tonight?

Having trouble thinking of what to cook with the chicken tonight, any ideas?

Also... how should I cook the chicken? usually put some oil on it and cook it in the oven..

If you have a jar of pre-made marinara sauce... or even a can of stewed tomatoes, salt, pepper and brown the chicken in a little oil in a pan, set aside. Add sliced onions (mushrooms and green peppers too if you have 'em) to the pan and saute for five minutes. Add a clove of chopped garlic, a cup of chicken broth and the tomato sauce and simmer for another five minutes. Add the chicken back to the pan, cover and cook over medium low heat for about 40 minutes, stirring occasionally. Serve with pasta or mashed potatoes... the chicken will fall off the bone and make the sauce so flavorful! yum!

CHICKEN ALA RON II

1/4 tsp black pepper
1/4 tsp paprika
1/4 cup flour
4-6 bone-in chicken thights ( skin removed)
4-tsp oil
2-med./large red onions ,peeled, quartered
1- lb new potatoes quartered (skin on) maybe (3 large)
15-20 baby carrots (whole)
11/2 cups chicken broth
1- tsp each, basil,, oregano, thyme
1/4 tsp red crushed pepper seeds ( more)
10-ozs. mushrooms, Portabellas, white buttons or Shiites ,or your choice
1-hand full chopped fresh parsley
5- garlic cloves minced

Preheat oven to 350 degrees
In a large zip lock bag add, pepper, paprika flour and chicken, shake well
to coat.
Heat oil over a med-high heat in a large Dutch oven. Add chicken, brown on
all sides, remove to a platter.
Add the potatoes and onions to the same pan with juices,cook for 5-6 mins.
Stir a bit !
Add the rest of the ingredients, bring to a boil
Return the chicken ,cover and bake for 30 mins.
Remove the cover and cook for another 20 mins.

Cook it in a pot adobo style and serve it over rice with the sauce.

In a pot, combine
Chicken thighs...appx 2 lbs
1/2 cup white vinegar
1/4 cup soy sauce
About 10 cloves of garlic, smashed
1/2 tbls peppercorns
2 bay leaves
If soy sauce is salt free, add a little salt

Bring to boil, then let simmer on low for about 30 minutes. Serve over white or jasmine rice.

I also add baby carrots sometimes, it takes just a little longer for them to get soft.
 
put it in the oven with chicken broth instead of oil and season the chicken with poultry seasoning and salt and pepper.,make buttered noodles or mash potaatoes and a veggie.
