I have done this in class for my students.

Basically, you just have to have a candy that has a slightly pitted surface to provide plenty of activation sites for the CO2 to come out of solution. You'll also want a hard candy so it won't dissolve too quickly. Diet soda works better then non-diet because the sugar either interfers or there isn't as much carbonation (haven't bothered to check out which is true). I have only managed to get it up to around 6ft, though I have heard of higher. And as a note- do it outside or there is LOTS of scrubbing involved.
