...Mustard Powder...? ...and tone down the heat so I can pour it over some cooked corned beef rather than smearing a little on at a time.

•1 teaspoon confectioners sugar (more if required)
•1/8 teaspoon garlic powder
•1/8 teaspoon salt
Combine all of the ingredients in a heavy-bottomed saucepan and cook over medium-low heat, stirring constantly, until the cheese has melted and the mixture is well combined. Serve warm.
I would consider basic white sauce made with flour and evaporated milk and butter add mustard to taste . The milk will tone down the initial heat and thickness can be controlled by cooking down to thicken while stirring.
