Cruising in January? ?

My family wants to go on a Carnival cruise next January. We have heard things about January being a party month on the ship. We've been on one cruise in July and want to know if there is a huge difference in atmospheres. Please help us out and tell us about your experience. We certainly don't want a party scene EVERYWHERE on the ship; only in the designated areas. We would be going to Cozumel and Progreso.
