Copying contacts and retaining info from IPhone 3G UK ANSWERS ONLY?

Hi

I want to change my iPhone as I hate it, to a htc.

Firstly how can I copy my contacts to my sim

Secondly I don't want to lose my text message history etc, so is there a way (after I've synched the phone with my PC) that I can store/copy/print things like texts, notes, diary entries? Is any of this automatically on the sim?
