Coolant? lack of acceleration in my 1962 truck?

So I was wondering why my 62 c10 truck will drive and run great and then out of nowhere it'll stop accelerating, ill just coast, even though my foot is on the gas, ill let go and then give it gas then it'll drive great again for like 5 seconds.. I was wondering what would cause that. I'm thinking Fuel filter since we cleaned out the carb and put new hoses on it. But I recently had a coolant leak, I changed the hose and filled it with coolant but, I checked today and it was low, could lack of acceleration be caused by low coolant level?? Please let me know, thanks.
