Why not just buy a pair of 26" smooth tread narrow road tires? Changing a tire does take longer than a wheel, but the investment is a lot less (you would need narrow tires anyway, right?). Instead of 2 minutes you would spend maybe 20 minutes. I do agree...

You don't remove links to solve chain stretch, period. You replace the chain. Removing links doesn't solve the stretch condition.
Check your derailleur adjustment. Check your chain for a twisted link. It will actually look like the front chain wheel is bent as the twisted part of the chain...
