just cook the peppers, onions and sausage together...puree the tomatoes in a blender, add some seasoning, then put it all on top of the pasta...easy.

My hubby is a chef in an Italian restaurant and one of his favorite dishes is Sausage and peppers penne. So slice up your sausage, peppers and onion and start sauteeing that with a bit of oil (add any herbs or spices/pepper) and boil your noodles. When the noodles are done drain them and add them to the sauteeing mixture and sautee slightly to mix the dish. That should be it. Sorry your tomato might have to be saved for later.

Start a pot of water heating to boil the pasta, once it begins to boil, add pasta and cook until al dente (kinda soft, ready to eat) drain and set aside. Cut up the sausage and brown in a skillet, add sliced bell peppers, then add sliced onions, then sliced tomatoes. Cook over medium heat until peppers and onions are done, add salt and pepper to taste. Serve over hot, drained pasta.
