When a new software comes our for iphone will a unlocked iphone crash?

i was at a apple store today and was talking to a employee about a unlocked iphone 3g. he said that when apple comes out with new software updates, the iphone will crash. but ive seen other people on youtube that have had unlocked iphones for awhile and they have not crashed.

EXPLAIN!!!
