How Should I Categorize Poultry on Wiki Site?

Hi all,

I'm making a wiki site for pet birds, but am having a little trouble on what catergories to make for the galliformes (poultry, fowl).

I was going to make different catergories for chickens, quail, waterfowl, and pheasants, but this leaves some problems.
What would turkeys go under? Or guineafowl, etc? I don't think I should just call a catergory "other galliformes".
And should ducks get their own catergory too or just leave them under waterfowl?
Should I just heap every one of them into galliformes and leave it at that?

(and no, unfortunetely I can't put articles into multiple categories, so it can't be fixed that way)
