How do you change the email on a Blackberry Pearl?

For Christmas I got my boyfriend a Pearl off of ebay. It looks and works like new, so I was just going to let him believe that it was. Thing is, I can't figure out how to change the original owner's email to his. Or delete it.

So it would be much appreciated if anyone could tell me how to do either of these things.
