Can i just cook red bell peppers in water?

I like raw peppers but i like them when they are softer a lot more. However, every time i eat cooked peppers, they are made with butter or olive oil and some seasoning. I really don't like any extra ingredients and they just add more calories. Can i cook red bell peppers in the microwave with a little water to make them soft (or boil them, but boiling them makes them loose some of their nutrients). Would it work, and would it still be flavorful?
