My top three are the mixer with shredder attachment, the food processor, and the tortilla press. I use them so often and have never regretted them.
(I have to do it all by hand at work, it's nice to have convenience at home.)
Actually I was going to suggest Cajun seasoning, which is pretty much what you just summed up in your post. You can't go wrong with Cajun seasoning and fish. (Go easy on the salt though, Cajun seasoning already has a ton of it.)

A packet of that Knorr/Lipton Mexican of Spanish rice mix. 7 minutes and it's done, then I toss in some canned black beans. Toss some cheese on it and nuke for a few seconds. Done in under 15 minutes.

You don't have to buy it. Check out your local freecycle.org group. Ask for used cooking oil. You'd be amazed at how many responses you'll get. You just have to go pick it up. There's one guy on our freecycle board who's always looking for it for the same reason as you. So I keep a coffee...
