If i unlock my iphone do i have to use the data bundle?

My service provider vodafone, for me to use 3G on my IPhone 3G, i will have to use their Data Bundle (300mb for some money), if i unlock my iphone, can i use the 3G as i want like on normal Nokia phones, and be charged on my using??
