I'm roasting carrots, parsnips, potatoes and shallots with some chicken which is recommended to be in the oven for 45 minutes. Does anyone know what I could do to the vegetables before putting them in the oven with the chicken, like boiling them? and for how long?

Ugh, don't boil them! Roll them in a little olive oil and s/p. 45 minutes should be plenty of time to cook those veggies. just make sure the pieces are small enough.

I don't boil them. I just cut them into chunks, toss with olive oil, salt and pepper and roast with the chicken. Easy. I don't even bother to peel the potatoes (I like that rustic look, anyway).

You could par-boil them, but why? Put the vegetables in the baking dish first and start them about 15-30 minutes before adding the chicken for the 45 minutes.
