Recipes for pre-prepared meals? Freezable meals?

I have a baby that keeps me busy & I often have free time early in the day (when he's napping) or on weekends, but evenings are crazy so I'm looking for meals I can pre-prepared & then cook easily or pre-prepare & then freeze. I'm on a budget too. Any good recipes or suggestions?
