I have about 3 to 4 cups of cooked vegetables leftover from a crockpot roast. White potatos, carrots, and celery pieces.
Any ideas on a good way to reuse them? They are very good and I hate to throw them out.

Oh, yum- how about a soup- any kind, but especially a potato soup- cook more potatoes if you need to, but add all you have now, too.
wrap then in biscuit dough and crisp them in olive oil
toss them in a salad
put them in a bowl and eat them w/ ranch
wrap them in a tortilla
send them to my house ! jk
Add some great northern beans and make a new meal out of it.
you can freeze and store them - make a soup, or a quick stir fry
Make a beef stew with them
make vegetable soup
Sometimes I just cut them into large bite size pieces and saute/fry them in their leftover juice. Brown them a little to get a nice crispness to them.
Or just microwave them as a side dish for another meal.
Oh, this happens to me alot -- and I make soup. Be sure and use the left over juice from the crockpot roast, that's good stuff. Add in a few more veggies (frozen peas, lima beans, corn, broccoli, cauliflower, etc.), a little V-8, seasonings, simmer for a bit, and you have dinner. All you need now are a few corn muffins, maybe a light dessert, and you have supper. YUM!
