Nope. Sorry. The OS of Nokia handsets is hardcoded in to the cellphones itself, it cannot be be changed.
I think your a bit confused as to what Java and Symbian is.
Java is a programming language
Symbian is an operating system (a very old and discontinued operating system - although Nokia did keep it going for years even though most other manufacturers killed it off). It's actually older than Android and iOS.
According to Nokia's website the X2 doesn't use Symbian, it uses Nokia OS, that's actually quite shocking really 'cos up until the Lumia most Nokia's were actually running Symbian - then they signed up to Windows Phone 7.
It does have Java v2.1 in the phone, and there are some Youtube videos on people running Symbian Belle on the phone, however they appear to be just a Java hack to make Nokia OS appear like Symbian Belle and not actually have the phone running Symbian - like the following

To actually get the phone to run Symbian you'd need to find some kind of rom that would work with the hardware in the X2 and flash the phone, but bear in mind that get it wrong and your most likely going to brick the phone, or you'll probably find some of the hardware doesn't work properly.
If you really want to use Symbian your probably best getting a cheap phone which has got Symbian installed on it. Most symbian phones are really cheap now as Symbian is an old OS now, replaced by Android, iOS and Windows Phone operating systems, and the best out of them 3 I'd say is certainly Android. iOS is very restrictive and lacks any Java or Flash support, and Windows Phone doesn't seem to have anywhere near as much support and third party apps as Android or iOS, plus it's a bit of a latecomer into the phone OS market, Microsoft were still on the harbour waving Bon Voyage whilst the phone OS ship was half-way across the ocean LOL - they certainly missed the boat on that one!
