I think she's the mom to Ritsu Sohma she comes out in the third volume chapters 13-18.

Owns the Onsen.
She repeatedly says "Gomen nasai", the polite form of sorry, as she thinks she does everything wrong.

Okami Sohma

She's the hostess of the Sohma family's onsen (hot spring) and the monkey (Ritsu)'s mother. She constantly apoligises becuase she feels like she's doing things wrong all the time and freaks out over everything.
