so i made potato knish's, they looked BEAUTIFUL the dough was perfect everything was great. i put them in the over (on wax paper MY BIG MISTAKE) thought it was the same as parchment paper...all throughout the baking process my oven was pouring smoke and i could not figure out why, so they finished and they looked nice. and i looked it up and apparently baking with wax paper is a no no...causes smoke! but i tried the knish and the dough was hard :(((( was this because of the wax paper issue?? or was the recipe just bad

It wasn't your cooking at all! It was the wax paper. The wax paper made it so that the dough didn't cook well enough, so instead of getting nice and flaky, the dough just got hard. Sorry! It must have taken a while ):

It is so disappointing when you spend your hard earned time to make something lovely and it gets ruined. Yes the wax would have ruined it.

Ah well, learning from experience isn't fun only useful.

Do try again, it will be worth it to master your knish.
