Should I get a regular bluetooth headset or a ps3 wireless stereo headset?

It depends. Do you want the headset to also function as the primary source of the game volume? If so, any stereo headset would be good (preferably with surround sound, like the PS3 one).

If all you want is the ability to chat with players, then a bluetooth will do fine.
