...10th anniversary?...? ...Possibly up to a week in May.
We want a place with no kids, in the U.S., and we enjoy the outdoors. All-inclusive is a plus.
 
Go to Gatlinburg and see the part of this country that was worth fighting for. It's up on the cumberland plateu so it has decent temperatures for summertime. Lots of things to do and see. Blue ridge parkway. State parks. Lots of places to get lost. Wild rivers. All the way down to Chattanooga. Ruby Falls cave. Lots of history if you are interested. Cumberland Playhouse in Crossville is great.
 
Niagara Falls (very nice, but commercialized)

Lake Louise, Canada. A bit of a hike, but absolutely gorgeous.

Taos, NM

Way up northeastern Wisconsin, by the thumb (Doar County) get a cabin by the lake

Vanderbilt Estate, Ashville, NC

Boca Raton Resort ..they treat you like royalty.

So it really depends what your style is...
 
The Smoky Mountains. You said you like the outdoors....well, you can hiking and all kinds of things!!

I suggest renting a cabin with a jacuzzi and/or a hot tub that's secluded!! Very nice! I actually got married in the Smokies and had a great time there!
