What does double prophecy and foreshadowing mean?

I asked a question earlier about a conflict between Isaiah 7:14 and Matthew 1:22-23. I got a few answers claiming double prophecy and also about it foreshadowing Jesus birth. I know Isaiah was talking to Ahaz when he said "But before the boy knows enough to reject the wrong and choose the right, the land of the two kings you dread will be laid waste." Isaiah is clearly stating the child is a sign to Ahaz. This took place 500 - 700 years before Jesus. Is it considered a double prophecy because Matthew chose to compare the birth of Jesus to Isaiah 7:14 ? And does foreshadowing mean the Gospel writers read the Old Testament and pick verses to describe Jesus? When I read the Old Testament it mostly refers to people and situations during their time not Jesus time.
