iPhone needs iTunes. You don't have to use Apple's AAC format. iTunes does conversions to the universal MP3 format as well, so use that.

As long as the phone has bluetooth, yes it should, no problem.

You would need a TurboSIM to unlock the iPhone 3G. But it makes no sense trying as the 3G is locked to AT&T who has you sign a 2 year contract before you are allowed to leave with it.

Yes, unlocking means you could use it anywhere in the world. Only thing is you must buy it on contract with AT&T 1st. There is no workaround that.
