I'm always reading attacks about how Israel is evil, but when the people surrounding them promise to wipe them out what options are they left with?

Please look up the Arab Peace initiative, it has been signed by EVERY single Arab country (it has also been signed by Hamas).

This gives Israel the full recognition and diplomatic and trade relations in return for Israel returning to the 1967( or giving back the land that it stole since then).

Thats the choice for Israel, but Israel prefers to steal land and kill the land owners and THEN complains about terrorism, extraordinary!

Israel has no other option but to defend itself against a million brainwashed fanatics broadcasting their hatred from all apertures, shouting for its destruction and urging the palestinians to fight on. Even though they lost the 1967 war, palestinians won't agree to peace unless they achieve the same result as if they had won.
I talked to several muslims on this topic and unfortunately, they are all misinformed. From the crib they were told the islamic lies and told not to believe anything from the media or non-muslims. So they all have this single-track mind about killing Jews and destroying Israel and not one would budge from that position.
