A recent diner at Per Se ventured behind Thomas Keller's hallowed kitchen doors and took some photographs that capture the management style of either owner Keller or his notoriously intense chef-de-cuisine Jonathan Benno. Underneath the clock is a plaque reading "Sense of Urgency." Above the threshold of another door is a plaque with the dictionary definition of finesse ("Refinement and Delicacy in Performance, Execution, and Artisanship"). We're all for aphorisms in the workplace but we wish these would be accompanied by some poster of a kitten clinging to a branch or something.
