Two questions here...

#1--is there a way to turn off the backup portion of the sync off without turning off syncing with iTunes completely (and no, I'm not interested in Limeware or how bad you might think iTunes is..so please don't answer that way). It's probably a nice feature, but I'm sick of it taking so long to sync...I get near daily podcasts and waiting 15-20 minutes (or more at times) just to sync is ridiculous. I've had plenty of iPods before and I'm used to only waiting that long if I restore the thing.

#2--This is a combo Touch and Phone question--I've noticed once I play around with a few apps my Touch starts slowing down a bit..then apps stop loading..then the whole thing does a massive automatic reboot (which takes 30ish seconds). Two questions in here-- 1 - is there a way to prevent this/slow it down/do a manual reboot (I know how to do a boot on a standard iPod, so no menu and center please, this is a Touch). 2 - Is this same problem on the iPhone?

Well, the first part of your question is easy to resolve. Just Go to preference|
Windows: Open iTunes > Preference > Syncing.
Mac: Open iTunes > iTunes > Preference > Syncing.
You should see your iPod Touch® or iPhone®, simply uncheck at the bottom of that panel "Disable automatic syncing for iPod Touch and iPhone". Problem solved. (You may need to sync a few times or restart the Computer and/or iTunes before the result is seen)

To restart the iPod Touch:

Just hold the only 2 buttons on the iPod until you see the beautiful Apple Logo.

Also, the crashes you're having are happening for everyone, pretty much. The fine people will fix these problems, just give 'em some times.
