At what rate can I expect to lose weight of my body size/weight and workout routine?

So I weigh in at roughly 325. I worked out last year and lost about 20 pounds over the summer. I only worked out every few days and nothing too grueling. I counted calories and once I stopped doing that, I stopped losing weight.

So here I am now, I've been working out again for two weeks with no intention of stopping. The difference is that I'm doing HIIT (High-Intensity Interval Training) for about 30 minutes *every day*.

I'm also counting calories and eating less than I was last time - sticking to a 2000 calorie diet.

So my question comes in two parts:
    1) How much weight can I expect to lose each week or month, and
    2) As long as I'm keeping my calorie intake low (2000 max), regardless of what food I eat, I should be losing weight (calories burned < calories consumed), right?

I'm not talking about eating burgers every day either - trying to eat as healthy as possible in the situation I'm in - so most of my food is healthy but on occasion I'll eat something not there (such as a slice of pizza).

    So, fill me in!
And please don't criticize my routine or tell me I should be exercising less, etc.

I know I've read that "2 lbs per week" is the recommended maximum, but I'm a big guy and I can afford to lose more.

If you're average height, at 325 pounds your basal metabolic rate is about 2700 calories. A pound of fat contains about 3500 calories. If you burn C calories every day during your workout, you'll lose about
    ( 2700 - 2000 + C ) * 7 / 3500 pounds per week.
For example, if you burn 300 calories per workout, and do that every day, you'll lose 2 pounds per week, assuming you stick to a 2000 calorie diet.
If you burn 800 calories per workout, you'll lose 3 pounds per week.
