For example, this website http://www.hoptechno.com/bookfoodsourcemg.htm states that Brazil nuts have 107 mg of magnesium per ounce, and then on actual raw brazil nut products, like this website http://www.nutsonline.com/nuts/brazilnuts/raw-noshell.html , the nutrition facts on the page state that the only nutrients found in 1 oz of brazil nuts is 4% of your calcium and 6% of your iron intake, magnesium isn't even mentioned. Similarly, whenever I buy frozen vegetables, the nutrition facts show minimal nutrient value for vitamins and minerals, when I'm sure a bag of mixed vegetables is packed with them. This is the same for canned beans, canned tuna, and boxed rice. All three of these things have multiple nutrients in them, but the nutrition facts either doesn't list vitamins/minerals that SHOULD be there, or are in amounts way less than web sites showing scientific nutritional analyses show. The answer can;t be food processing destroying nutrients, because these foods I have listed are either raw or barely processed. What gives?
