How do I extract the English Audio from a DVD?

I have a foreign film DVD that is in French. I want to burn a copy in VCD format for my Mama as she does not have a DVD player, only a old vcd player ( she thinks its a waste of money to buy a dvd player)
- When I extract the movie into a file to be made into vcd, it only has the French audio. How do I also extract the English audio dub with the movie so that my Mama can watch the movie in English as well?
- The original DVD has French, English, German and Spanish audio dubs. How to get the English language?
