I know what you mean ! It feels like you have a dull finish on your teeth.
In spinach there is oxalic acid, and that weird feel on your teeth is caused by oxalic acid. Best thing to do is to brush your teeth afetrwards or you can reduce oxalic acid by blanching raw spinach.

It's probably the oxalate (sp?) which may cause your teeth to feel squeaky.
It was raw right?? Yeah it's this weird waxy yucky feeling just brush.

I notice that too when I eat spinach, it is kind of a put off for me actually. I would describe it as a waxy type of feeling. I always just chalked this up to the naturally occurring plant waxes on the leaves. Pretty sure it is just a characteristic of the plant and is harmless.
Spinach is naturally gritty because it is grown in very fine sand which remains after washing.
