    how to cook skinless chicken?

    whats a good way to cook boneless/skinless chicken breast.. so that its NOT dry? Yet, still diet-friendly

    No boiling- I HATE boiled chicken.. grilling is too dry.

    Oh, and a way that doesnt take a freakin hour to cook too please.
    DIET FRIENDLY

    Cannot fry it in oil.. FAIL
    my BF purchased skinless breasts.. so cooking with skin is not an option- its already gone.


    Chicken breast tastes dry to me anyways overcooked or not.. very rarely have I tasted a nice peice of chicken breast that was moist.. I just wish I knew how to get it that way myself.
    *sigh* I fail to see how things like fried onion rings, bread crumbs and ranch dressing makes for diet-friendly chicken.

    Spray a deep pan or pyrex dish with Pam. Put the chicken in the pan, cover with pesto and cover the pan with aluminum foil and bake at 400 degrees. Add shredded cheese before it is done if you like and then take it out when the cheese is bubbling.

    I have tried using French Fried Onion Rings you know the kind you use for green bean casserole. Smash the rings and bread the chicken with them of course after an egg wash. Then bake in oven. Yummy. The recipe in on the French's website.

    Well, grilling doesn't have to be dry. You can grill it with a lemon & herb type of sauce on it, for example. Baking and steaming are pretty much the only other options and they do take a while. :/
