Thread: Great vegetable stew recipe?

My friend makes great vegetable stews (with lots of wine) but invariably doesn't remember (hmmmm) how she makes them.

I want to make a great tasting vegetable stew with carrots, potatoes, and lentils. Does anyone have a good recipe for one that tastes really nice?

A stew is the easiest thing in the world to make. Soak your lentils over night, rinse them and bung them in a dish full of your favourite vegetables. Add a veggie stock cube and water and bung in the oven for an hour or so. Thicken the sauce with a bit of cornflour or some veggie demi glace and voila - eat with crusty bread. Yum yum
