What's the difference between an analog and digital cable (ie. VGA and DVI among...
...others)? it seems like they would all be digital to me.

It is not that the cables are analog or digital, it is the signals that run through them that are analog or digital.

An analog signal is continuous - think of it as a waveform. A digital signal is just made of 0's and 1's.
