Which engine overall was better far as building it as a high performance engine? The chevy 350 or the 327?

The 350. From the factory, the 350 is already a bigger motor, which gives you that many more cubes to work with.Dollar for dollar, the 350 will make more power every time. The after-market is flooded with parts for it and a million different people have built a million different combinations. There is no end to the info.you can find out there.
