I have an 01' Windstar. At stop lights it will idle weird from like 500 to 750 rpms. It like accelerates than stops 1 second and accelerates again. When the brake is not applied hard enough it will start to slip, and drive ahead. This would happen on our 01' back when it was like 2 years old...

There should be tabs or little knobs on the ends of the bars themselves, loosen them or press them on each side and move them, than tighten them into the desired place.
The transmissions are bad in those cars. arg. I have a 2002 accord at like70k its started acting up its at 97k. When we go from like 15-20mph it hesitates and jerks a little bit. Look into getting the transmission rebuilt or replaced.
